Asian Shrimp Tacos With Spicy Lime Slaw

I am soooooo happy this week is over. It was hot and busy, a recipe bound to lead to exhaustion.

Seriously. And all I have left to do is plan for the trip I’m going on with my mom next week! I’m so excited! We are heading to Central Oregon to visit the Painted Hills, then traveling South to Bend, OR. We’re then hitting Crater Lake National Park on our way down to Northern Cali, where things get a little less planned out. Possibly Lassen Volcanic National Park, definitely some hiking, maybe McArthur-Burney Falls (we’ve both been there before, but it’s really pretty!), and definitely Redding for an In-n-Out Burger. (Priorities, right?) Then back home!

I haven’t gone on a trip longer than one or two nights since 2012 so I am definitely jumping out of my skin with excitement. It will be so nice to get out of my head and out on the road, to get to spend some quality time with my mom, eat some great food, take a million photos, and enjoy nature.

Anyway, onto the recipe! Not long ago, I was really craving tacos, but I was also craving some Asian food (when am I not?). I came up with these Asian shrimp tacos with spicy lime slaw as a compromise between the two: perfectly toasted corn tortillas topped with sweet, teriyaki-inspired shrimp, a spicy lime cole slaw to add tangy flavor and crunch, and a dizzle of sriracha mayo for more spice and some creaminess to bring everything together.

And might I say myself, they were the bomb.

Quick enough for a weeknight, especially if you prepare the slaw the night before (it gets better as the flavors soak in), but special enough for company. Simply double or triple the recipe as needed! Hope you enjoy them as much as we did!

Asian Shrimp Tacos With Spicy Lime Slaw
 
Sweet, teriyaki-inspired shrimp pair perfectly with spicy and tangy lime slaw and creamy sriracha mayo in these delicious tacos.

Ingredients
Marinade:
  • 1 tablespoon honey
  • 1 tablespoon tamari
  • 1 tablespoon rice vinegar
  • 1 teaspoon chili garlic sauce
  • 1 clove garlic, minced
  • 1 teaspoon minced ginger
  • Salt and pepper
Slaw:
  • 4 cups shredded cabbage
  • 2 carrots, shredded(about 1 cup)
  • 2 green onions, sliced
  • ¼ cup mayo
  • 1 lime, juiced (2-3 tablespoons juice)
  • 1 tablespoon honey
  • 2 teaspoons chili garlic sauce
  • 2 cloves garlic, minced
  • Salt and pepper
Tacos:
  • 1 lb medium shrimp (16-20 per lb)
  • 1 teaspoon coconut oil
  • 6 corn tortillas
  • Sriracha mayo
Instructions
  1. Prepare slaw several hours before making your tacos, or even the day before. To make dressing, combine all ingredients except cabbage, carrots, and onions in a small bowl. Place first three ingredients in medium bowl and pour dressing overtop, mixing well to combine. Place in fridge.
  2. Combine all ingredients for marinade in a medium bowl. Add shrimp to marinade and place in fridge for 30 minutes.
  3. After 30 minutes, heat coconut oil in skillet over medium high heat. Once pan is hot, add shrimp. Cook 4-5 minutes, until shrimp is no longer pink.
  4. If desired, heat tortillas in warm oven or in microwave.
  5. To serve: Place 3-4 shrimp in a corn tortilla, top with a scoop of slaw, and drizzle sriracha mayo, if desired. Makes 6 tacos.
