When November hit and the days started getting colder and darker, that meant one thing to me: OATMEAL. More specifically: Cinnamon spiced pear oatmeal.
Okay, it probably meant more than that. But, right now we’re talking about oatmeal. And this oatmeal is worth talking about: it’s sweet, creamy, cinnamon-y, and perfect for a crisp, fall morning.
I used to be the absolute worst morning person ever. You might not believe me, but my parents certainly do (sorry, mom and dad). When I say the worst, I mean refusing to wake up, crying once I was up, snapping at anyone who tried to be nice and talk to me, the whole she-bang of morning unpleasantry.
But, maybe, just maybe, if I had been able to eat this oatmeal….
Maybe mornings would have been a better time.
- 1 cup rolled oats*
- ¼ teaspoon salt
- 2 cups water (or almond milk)
- 1 ripe Anjou pear
- ¼ cup raisins
- 2 tablespoons chia seeds
- 1 teaspoon vanilla extract
- ⅓ cup pomegranate aerils
- Nut butter of choice (optional)
- Sweetener of choice (optional)
- Cut pear in half. Dice half of pear and set other half aside.
- Bring water (or almond milk) and salt to a boil. Stir in oats, diced pear, and raisins, then reduce heat to low and simmer 5-10 minutes, until liquid is absorbed and pears are soft. You may need to add additional water (or almond milk) while simmering.
- With remaining pear half, either dice or slice for topping oats with.
- Remove oats from heat. Stir in vanilla extract, cinnamon (as much as you desire!), and sweetener, if using. Divide equally between two bowls. Top with pear, chia seeds, pomegranate aerils, and nut butter (if using). Sprinkle with extra cinnamon and dive in!
